As to why it's called pudding, I suspect that it's just part of the way words change their meaning over the years.

I dunno I don't understand the whole pudding issue over there. This is one of those things my Brit and I have discussed a lot. First there is the yummy Yorkshire puddings, and then there are black, white and red puddings (which are different types of sausages and meat dishes) and then there is pudding which means basically almost any kind of a desert. Very very confusing...... Tasty but confusing...
